You think that you have seen it all and then you go to Japan.

I have never seen tuna this big. Or fish this fresh. Imagine the largest fishmarket you have ever seen, multiply times 1000 and there you have the Tsukiji fishmarket in Tokyo. Where I had the freshest sushi for breakfast at 7AM in the morning.

Tokyo has about 100,000 restaurants of which 150 have at least 1 Michelin Star. I didn’t know where to start! Many restaurants have limited seating with just a long counter from where you can see the chefs at work. The Japanese chefs are like artists and much detail is put in the preparation and plating of each dish.

I used the limited time that I had to try as many dishes as possible. Sake & sushi, lunch from a bento box, soba noodles, miso soup, fugu (the poisonous blowfish), the famous kobe beef, raw sea-urchin, a 10-course meal of modern Japanese cuisine, a tempura lunch, chicken at a yakitori-ya. I have been busy!
